Chicken Enchilada Casserole - cooking recipe
Ingredients

1 c. chopped onion
1/2 c. chopped green pepper
1 Tbsp. butter or margarine
2 c. chopped, cooked chicken or turkey
1 (4 oz.) can green chili peppers, or jalapeno pepper, rinsed, seeded and chopped
3 Tbsp. butter or margarine
1/4 c. all-purpose flour
1 tsp. ground coriander
3/4 tsp. salt
2 1/2 c. chicken broth or boiling water with 2 chicken bouillon cubes (omit salt)
1 c. dairy sour cream
1 1/2 c. shredded Monterey Jack cheese (6 oz.)
12 (6-inch) tortillas or 8 (10-inch) tortillas
Preparation

In a large saucepan, cook onion and green pepper in the 2 tablespoons butter or margarine until tender.
Combine onion mixture in a bowl with chopped chicken and green chili peppers; set aside.
