Jane'S Chicken Soup - cooking recipe

Ingredients
    2 large carrots, grated or cut in small pieces
    3 1/2 c. chicken stock or 2 (14 oz.) cans broth
    1 onion, chopped
    4 stalks celery, chopped
    1 medium potato, diced
    1/2 green pepper, chopped
    1 lb. tomatoes, peeled and chopped, plus 1 (6 oz.)can tomato juice or 1 lb. can tomatoes with juice
    1/2 lb. diced, cooked chicken
    pepper to taste
Preparation
    Combine all ingredients in a stockpot. Cover and simmer for a few hours. Adjust seasoning to taste.
    Serves 6.
