Cajun Shrimp And Rice - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 medium onion, diced
    1 medium tomato, diced
    2 c. water
    1 1/2 c. clam juice or low sodium chicken broth
    2 c. saffron rice (yellow)
    3/4 lb. raw shrimp
    1 pkg. frozen peas
Preparation
    Saute the onion in olive oil.
    Add the diced tomato, 2 cups water and clam juice or chicken broth. Simmer to a boil.
    Add rice to water and simmer 10 minutes.
    Sprinkle shrimp on top of rice. Sprinkle peas from package over shrimp. Cover and simmer until done.
    Serves 4 (1/2 cup) portions.
