Ingredients

6 qt. sliced beets
4 c. vinegar
2 1/2 to 3 c. sugar
3 tsp. salt
3 tsp. mixed pickling spices
Preparation

Wash beets and cut tops, leaving 1-inch of stems and entire root.
Cook until tender.
Slip skins and cut into desired size pieces.
Bring to boil with remaining ingredients.
Pack into hot, sterilized jars and fill with boiling liquid.
Seal.
