Potato Pancakes - cooking recipe

Ingredients
    2 c. diced onion
    1 c. rendered bacon
    1/2 c. heavy cream
    5 lb. diced potatoes, steamed
    1/2 lb. whole butter
    4 oz. cut chives
    2 eggs
Preparation
    Saute bacon over medium heat until bacon is almost cooked. Add onion and cook until soft.
    Add cream and chives.
    In mixer, beat potatoes until they are just crumbly; add cream mixture and eggs.
    Roll in parchment paper and slice into cakes.
    Saute in a little oil until brown on both sides.
