Imitation Crab Salad - cooking recipe
Ingredients

1 (8 oz.) pkg. frozen imitation crabmeat, shredded
1/2 c. finely chopped celery
1/4 c. minced onion
2 Tbsp. chopped pimiento
mayonnaise
lemon-pepper seasoning
lemon juice
Preparation

Mix crab, celery, onion and pimiento with just enough mayonnaise to completely moisten.
Add lemon-pepper seasoning and lemon juice to taste.
Allow to sit, covered, in the refrigerator at least 2 hours before serving.
Serve over a bed of lettuce with tomato wedges and fruit garnish for a super-refreshing lunch!
