Chicken Cacciatore - cooking recipe
Ingredients

6 skinless boneless chicken breasts
1/4 c. olive oil
1 1/2 lb. plum tomatoes, diced
1 medium onion, chopped
2 large green peppers, sliced
1 large red pepper, sliced
2 whole cloves garlic, crushed
1 Tbsp. oregano
1 Tbsp. basil
1 c. tomato juice
salt and pepper to taste
1 bay leaf
Preparation

In a large oblong pan, pour in your olive oil.
Place rinsed and dried chicken breasts in pan.
Cover breasts with tomato juice, plum tomatoes, onions, peppers, garlic and your spices.
Cover pan and bake at 350\u00b0 for 1 hour and 30 minutes.
Halfway through the baking time, take pan out of oven to check if there is enough liquid in pan.
If not, add about 1/2 to 3/4 cup water.
Continue to bake until done and tender; enjoy!
