Squid In Tomato Sauce(Calamari Al Sugo) - cooking recipe

Ingredients
    2 1/2 lb. squid
    1/4 c. olive oil
    1 large onion, chopped
    1 c. celery, chopped (both stalk and leaves)
    1 clove garlic, minced
    1 tsp. basil
    1 tsp. parsley
    1/4 tsp. crushed red pepper
    2 c. tomatoes, crushed
    salt and pepper
Preparation
    Peel squid and remove insides.
    Cut off tentacles and heads. Pull out thin bone and wash well.
    Slice tubes into 1/2 inch rings.
    Parboil rings and peeled tentacles about 2 minutes and drain.
    Saute onion and celery in olive oil.
    Add garlic and brown lightly.
    Mix in the squid and seasonings.
    Blend well and brown 5 minutes.
    Add tomatoes and simmer 40 minutes or until tender.
    A small amount of water can be added to thin sauce if desired.
    Can be served over capellini or rice.
