Peppery Pear Relish - cooking recipe

Ingredients
    15 pears, peeled, cored and ground
    12 medium onions, ground
    6 sweet red peppers, ground
    6 green peppers, ground
    6 hot peppers, ground
    2 Tbsp. celery seed
    2 c. white vinegar (5% acidity)
    2 c. prepared mustard
    2 c. sugar
    1 Tbsp. salt
Preparation
    Combine all ingredients in a large kettle, mixing well.
    Bring to a boil; reduce heat and simmer, uncovered, for 30 minutes, stirring occasionally.
    Pour hot mixture into hot, sterilized jars, leaving 1/4-inch headspace.
    Remove air bubbles; wipe jar rims.
    Cover at once with metal lids and screw on bands.
    Process relish in boiling water bath for 20 minutes.
    Yields 12 pints.
