Buttermilk Oatmeal Muffins - cooking recipe
Ingredients

1 1/2 c. oatmeal
1 1/2 c. buttermilk
2 eggs or egg substitute
1/2 c. brown sugar
1/2 c. oil
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 Tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. cut dates
1/2 c. nut meats
Preparation

Mix oatmeal and buttermilk; let stand 10 minutes.
In a large bowl, combine eggs, sugar, oil and vanilla.
Add the oatmeal mixture.
In a small bowl, mix flour, leavening and salt.
Add to the moist mixture.
Add the nuts and dates; blend gently until just mixed.
Put in lined or greased muffin pans.
Bake at 400\u00b0 for about 20 minutes.
