Braised Chicken Over Couscous - cooking recipe
Ingredients

1 Tbsp. seasoned breadcrumbs
2 boneless skinned chicken thighs
vegetable cooking spray
1 tsp. olive oil
1/2 c. chopped onion
1/2 c. diced carrot
1/2 c. diced celery
2 Tbsp. water
1 c. diced tomatoes
1/2 tsp. grated orange rind
1/4 tsp. dried rosemary
1/8 tsp. salt
1/8 tsp. pepper
1 clove garlic, crushed
2 c. couscous
Preparation

Place breadcrumbs in a shallow dish; dredge chicken in breadcrumbs and set aside.
Coat a nonstick skillet with cooking spray.
Add oil.
Place over medium heat until hot.
Add chicken. Cook 3 minutes on each side or until browned.
Remove chicken from skillet; set aside.
Keep warm.
Add onion and next 3 ingredients.
Cook over medium heat for 5 minutes.
Add tomatoes and next 5 ingredients, stirring well.
Return chicken to skillet. Cover; reduce heat.
Simmer 20 minutes or until chicken is done. Serve over couscous.
