Louisiana Chicken Sauce Piquante - cooking recipe

Ingredients
    2 chickens (about 3 lb. each)
    3 c. cooking oil
    1 c. finely chopped celery
    1 bunch shallots
    1 c. flour
    salt, red and black pepper to taste
    3 small (8 oz. each) cans tomato sauce
    4 cloves garlic, finely chopped
    3 lb. onions
    1 c. bell pepper, finely chopped
Preparation
    Measure cooking oil and pour into large cast-iron pot.
    Cut chickens into serving size pieces and season with salt, red pepper and black pepper.
    Brown in cooking oil.
    Remove chicken from pot and place in pan.
