Stir-Fry Sesame Green Beans - cooking recipe

1 lb. fresh green beans, cut into 1-inch pieces
1 Tbsp. canola oil
1 c. julienned sweet red pepper
1 c. thinly sliced fresh mushrooms
1/4 c. thinly sliced green onions
2 garlic cloves, minced
3 Tbsp. reduced-sodium soy sauce
2 tsp. minced fresh gingerroot
1/4 c. sliced dried apricots
1 tsp. sesame oil
2 tsp. sesame seeds, toasted
Preparation

In a large nonstick skillet or wok, stir-fry beans over medium-high heat in oil for 2 minutes. Add sweet pepper and mushrooms; stir-fry 2 minutes longer. Add green onions and garlic; stir-fry for 1 to 2 minutes.
