Beef Stroganoff - cooking recipe
Ingredients

70 lb. beef cubes
5 c. shortening
5 lb. chopped onion
5 Tbsp. salt
5 tsp. pepper
4 1/2 gal. beef stock
5 c. flour
10 c. water
3 3/4 c. Worcestershire sauce
10 lb. sliced mushrooms
10 lb. sour cream
Preparation

In large 5-gallon stockpot, brown meat in shortening. Add onion and seasonings. Add stock to meat and simmer 35 to 40 minutes or until meat is just tender. Do not overcook (do not want beef mushy). In large bowl, mix flour, water and Worcestershire sauce and stir until smooth. Add to the meat while stirring and cook until thickened. Add sour cream to meat mixture, stirring constantly. Add mushrooms. Heat to 180\u00b0. Place into two 12 x 20 x 6 pans plus one 12 x 9 x 6. Keep warm in oven until you serve. Makes 250 (6 ounce) portions.
