Vegetarian Enchiladas - cooking recipe

Ingredients
    1 large onion
    1 to 2 bell peppers
    1 to 2 cans stewed tomatoes
    1 glove garlic
    1 to 2 tsp. cumin
    1 can green chilies
    1 can sliced black olives
    1 large sour cream
    12 oz. shredded Cheddar cheese
    1 pkg. flour tortillas
Preparation
    Finely chop onions and bell peppers; saute.
    Add stewed tomatoes, chopped chilies and chopped garlic.
    Add cumin to taste. Cook down until thick.
    Roll mixture into flour tortillas.
    Add olives and 1 to 2 spoons sour cream and Cheddar cheese to each tortilla.
    Place tortillas in a pan; pour any remaining sauce over them.
    Top with shredded cheese and bake at 350\u00b0 until bubbly.
