Broiled Shrimp With Garlic Butter - cooking recipe

2 lb. shrimp in shells
1/4 lb. butter
1/2 c. olive oil
1 Tbsp. lemon juice
1/4 c. scallions, chopped
1 Tbsp. garlic, chopped
black pepper, ground
4 Tbsp. parsley, chopped
Preparation

Shell the uncooked shrimp but do not remove the tails.
Split them down the back and remove the intestinal veins.
Wash under cold water and dry.
Preheat broiler to the highest temperature. In a pan melt the butter; then add the oil, lemon juice, scallions, garlic and pepper.
Add shrimp and broil 3 to 4 inches from the heat for 5 minutes.
Then turn and broil 5 minutes on the other side.
Serve on a platter with parsley and strained juices from the pan.
