Baked Eggplant(Yields 4 Servings) - cooking recipe

Ingredients
    1 lb. eggplant
    1/8 tsp. pepper
    3 Tbsp. flour
    1 egg, beaten
    1/4 c. dry low sodium bread crumbs
    2 Tbsp. butter (unsalted)
Preparation
    Pare eggplant and cut into 1/4-inch cubes.
    Sprinkle with pepper, dredge with flour, dip into egg and then into crumbs. Place into casserole, dot with butter and bake in slow oven (325\u00b0) about one hour.
