Southwest Chicken Bake - cooking recipe

Ingredients
    4 to 5 skinless, boneless chicken breasts
    1 can black beans with jalapenos
    1 can corn
    1 can of your favorite chunky salsa or mexican style diced tomatoes
    monterey jack cheese
    onion & bell pepper (optional)
    salt & pepper to taste
Preparation
    Open cans and drain beans, corn, and tomatoes.
    Do not rinse. Add chopped onion and chopped bell pepper.
    Mix everything together.
    Meanwhile, place chicken breast in a 9x13 inch pan and season to taste with salt and pepper.
    Spread the vegetable mixture evenly over the chicken and bake at 350\u00b0 for approximately 30-40 minutes, or until chicken is done.
    Top with shredded monterrey jack cheese (as much or as little as you like) and cook about 5 more minutes or until cheese is melted and bubbly.
