Crab Cakes(Serves 4) - cooking recipe
Ingredients

1 lb. crab meat (about 3 c.)
2 eggs, lightly beaten
1 green pepper, chopped
1 tsp. dry mustard
1/2 tsp. salt
1/8 tsp. pepper
1/3 c. cracker crumbs
3 Tbsp. mayonnaise
additional cracker crumbs
butter for cooking
Preparation

Combine eggs with the green pepper, mustard, salt, pepper, cracker crumbs and mayonnaise.
Fold in crabmeat; shape into cakes.
Coat with additional crumbs; refrigerate for 1 hour, or until ready to cook.
Saute in butter over medium heat for about 3 minutes per side, or until delicately browned.
