Broccoli Soup #3 - cooking recipe

Ingredients
    1 medium head broccoli or cauliflower (fresh or frozen)
    3 c. cold water
    2 c. hot milk
    3 Tbsp. butter or oleo
    3 Tbsp. flour
    1/2 c. chopped onion
    4 chicken bouillon cubes
    1 tsp. salt
    1 beaten egg
    1/4 to 1/2 c. grated Swiss or Colby cheese
Preparation
    Cook vegetables with water for 5 to 10 minutes.
    Drain.
    Save 2 cups of the vegetable water.
    Melt butter, stir in flour.
    Add onions and salt.
    Cook over medium heat 3 minutes, stirring constantly.
    Stir in 2 cups hot vegetable water, milk and bouillon cubes.
    Add vegetables and heat 20 to 30 minutes.
    Before serving, pour in beaten egg in a steady stream, stirring constantly. Garnish with cheese.
    Serves 4.
