Easy Chicken Cacciatore - cooking recipe

Ingredients
    2 1/2 to 3 lb. chicken, cut up
    2 Tbsp. olive oil
    2 (14 1/2 oz. each) cans Del Monte Italian-style stewed tomatoes
    1 (6 oz.) can tomato paste
    2 c. sliced mushrooms
    1 c. sliced zucchini
    1 tsp. basil, crushed
    hot, cooked pasta
Preparation
    Brown chicken in oil 10 minutes, turning occasionally; drain. Add tomatoes, tomato paste, mushrooms, zucchini and basil.
    Salt and pepper to taste, if desired.
    Cover and simmer 25 minutes. Serve over pasta.
    Garnish with parsley, if desired.
    Makes 4 to 6 servings.
