Chocolate Orange Passion Cake - cooking recipe

2 c. White Lily all-purpose flour
1/2 c. unsweetened cocoa
1/2 tsp. salt
1/2 c. milk
1 tsp. vanilla
orange juice, freshly squeezed from 1 orange
2 c. sugar
1 tsp. baking soda
3/4 c. vegetable oil
2 eggs
2 Tbsp. grated fresh orange peel (from 1 orange)

Preparation

Preheat oven to 350\u00b0.
Grease 3 (8-inch) or 2 (9-inch) round pans or a 13 x 9-inch pan.
Line bottom of pans with waxed paper cut to fit pan.
Grease the paper and flour the pans.
Combine dry ingredients in large mixing bowl on low speed for several minutes to blend thoroughly.
Add oil, milk, eggs, vanilla and orange peel.
Beat for 2 minutes at medium speed, scraping sides of bowl as needed.
Add enough boiling water to orange juice to make 1 cup total.
Stir water and juice into batter until blended.
Batter will be thin.
Pour batter evenly into prepared pans.
Bake for 30 to 35 minutes, or until toothpick inserted near center comes out clean.
Cool on wire rack 5 minutes before removing from pans. Finish cooling on wire rack.
Frost with Creamy Chocolate Orange Frosting; garnish with mandarin orange slices dipped in melted chocolate.
