Pineapple Scallop Kabobs - cooking recipe

Ingredients
    1/2 c. Pineapple Juice
    2 Tbsp. Soy Sauce
    1 Tbsp. Lemon Juice
    10 oz. fresh Scallops
    2 canned Pineapple Rings
    1 Red Pepper, cut into 1 inch squares
    1 Green Pepper, cut into 1 inch squares
    8 Cherry Tomatoes
    1 c. cooked Rice
Preparation
    Combine Pineapple Juice, Soy Sauce, Lemon Juice in a large mixing bowl.
    Add Scallops and Pineapple Rings; toss to coat. Marinate, covered, in a refrigerator for 1 hour, stirring occasionally.
    Preheat broiler.
    Remove Scallops and Pineapple Rings from the marinade, discard the marinade.
