Tomato Preserves - cooking recipe

Ingredients
    1 lb. firm, ripe tomatoes
    1/2 lemon, thinly sliced
    3/4 c. water
    1 2/3 c. sugar
Preparation
    Dip tomatoes in boiling water and then in cold water and remove skins.
    Boil lemon with 1/4 cup water for 5 minutes.
    Heat the remaining 1/2 cup water and add sugar; simmer 5 minutes to make a syrup.
    Then add cold tomatoes, lemon and the lemon water and boil until tomatoes are clear and syrup thickens slightly.
    Pour into hot jars and seal.
    Makes 2 to 3 half pint jars.
