Ingredients

1 large carton persimmon pulp (4 c.)
4 eggs
1 stick melted margarine
2 c. sugar
1 c. buttermilk
1/2 tsp. soda
1/2 tsp. ginger
1/2 tsp. cinnamon
2 to 2 1/2 c. flour
Preparation

Mix together buttermilk and soda.
Melt margarine in long casserole dish you plan to use.
Add to batter.
Makes 2 (1 1/2-quart) casserole dishes or 1 large pan.
Cook at 350\u00b0 until brown on top, 45 minutes to 1 hour.
Place 2 strips bacon on top before cooking.
