Ingredients

2 c. sugar
1 c. butter
1 c. seedless jam
1 c. English walnuts
1 c. crushed pineapple
4 eggs
1 c. buttermilk
1 tsp. soda
3 c. plain flour
2 tsp. cinnamon
1 tsp. ginger
1 tsp. allspice
2 tsp. nutmeg
Preparation

Cream together butter and sugar.
Separate eggs.
Add yolks, jam and pineapple to the creamed mixture.
Blend until smooth. Mix dry ingredients and add alternately with the buttermilk to the creamed mixture.
Beat egg whites until stiff.
Fold egg whites and nuts into the batter.
Bake in three small 8-inch layer pans at 350\u00b0 for 45 minutes.
Spread with Caramel Icing.
