Southwestern Black Beans And Rice - cooking recipe

Ingredients
    1 c. dried black beans
    3/4 c. sliced carrots
    3/4 c. sliced celery
    1/2 c. chopped onions
    1 (4 oz.) can chopped green chilies
    1 clove garlic, minced
    1/8 tsp. crushed red pepper
    black pepper to taste
    1 c. ham, cooked and diced
    1/2 c. red bell pepper, diced
    1/2 c. green bell pepper, diced
    2 tsp. vegetable oil
    3 c. hot cooked rice
Preparation
    Bring 1 quart of water to boil in Dutch oven or large saucepan. Stir in beans and next 7 ingredients.
    Cover and simmer 2 1/2 hours, stirring occasionally.
    Add ham; simmer an additional 15 minutes.
    Cook red and green peppers in oil until tender-crisp. Stir into rice.
    Serve beans with rice.
    Makes 4 servings, only 359 calories per serving and 5 grams of fat.
