Hot Potato Salad - cooking recipe

Ingredients
    3 Tbsp. oil
    1/4 c. onion, finely chopped
    1 Tbsp. flour
    1 1/2 tsp. salt
    1 Tbsp. sugar
    1/4 tsp. dry mustard
    3 Tbsp. vinegar
    3 Tbsp. water
    2 Tbsp. sweet pickle relish
    1/3 c. celery, diced
    2 Tbsp. green pepper, chopped
    2 1/2 c. diced, cooked potatoes
Preparation
    Brown onion in oil.
    Blend salt, sugar, mustard and flour; stir into onion.
    Add vinegar and water slowly, stirring constantly, and cook until thick.
    Blend pickle relish, celery, green pepper and diced potatoes.
    Pour on the hot dressing, mixing lightly.
    Serve hot.
    The flavor is improved by putting the prepared salad into baking dish, covering and heating 20 minutes in a moderate oven.
