Roquefort Cream Dressing(Aunt Mary'S Recipe) - cooking recipe

Ingredients
    1/3 c. scallions or combination Bermuda onion and chives
    2 c. mayonnaise
    2 grated cloves garlic
    1/2 c. chopped parsley
    2 Tbsp. anchovy paste
    1 c. thick sour cream
    1/2 c. vinegar
    2 Tbsp. lemon juice
    1/2 lb. Roquefort or Blue cheese, crumbled
    pepper
Preparation
    Cut out root ends and chop finely, tops and all, to make scallions.
    Combine mayonnaise, garlic and chopped parsley.
    Add to mixture the anchovy paste.
    Combine and add sour cream and vinegar. Add lemon juice to thin mixture.
    Add Roquefort or Blue cheese, crumbled.
    Season with pepper (no salt; anchovy paste is salty). Chill.
    Will keep for 1 month.
    Use as salad dressing or on crackers or tomato aspic.
