Chicken Scampi(Easy, Fast And Good!) - cooking recipe

Ingredients
    1/2 c. butter
    1/4 c. olive oil
    1/4 c. finely chopped green onions
    1 Tbsp. minced garlic
    juice of 1 lemon
    2 lb. chicken breasts, boned, skinned and cut into 1/2-inch pieces
    1 tsp. salt
    1/2 tsp. pepper
    1/4 c. minced fresh parsley
    1 tomato, chopped
    buttered noodles, rice or other pasta
Preparation
    In a skillet, heat together butter and olive oil; saute green onions and garlic.
    Add lemon juice, chicken, salt, pepper and parsley.
    Continue cooking, stirring constantly, for 5 to 8 minutes or until chicken is done.
    Add tomatoes and heat through. Serve over buttered noodles or hot rice.
