Cherry Loin Roast - cooking recipe

Ingredients
    4 - 5 lb. pork loin roast (loin end)
    1 tsp. salt
    1/2 tsp. ground cloves
    1/4 tsp. pepper
    1/2 cup cherry preserves
Preparation
    Place roast fat side up on rack in shallow pan.
    Insert meat thermometer in center of roast.
    Roast uncovered in preheated 325 degree oven allowing 30 - 35 minutes per pound.
    Thermometer should register 170 degrees.
