Brazilian Rice - cooking recipe

Ingredients
    1 medium onion, sliced
    2 cloves garlic
    1 bay leaf
    4 to 5 ripe fresh tomatoes, chopped
    1 Tbsp. olive oil
    1 c. Uncle Ben's converted rice
    water
    salt to taste
Preparation
    Fry onion, garlic and bay leaf in oil until golden brown.
    Add chopped tomatoes.
    Stir until tomatoes are soft.
    Add rice and stir into tomato mixture.
    Add enough water to cover rice.
    Cover and simmer until moisture is absorbed.
    Remove bay leaf before serving.
    Serves 3 to 4.
