Sweet Potato Cashew Bake - cooking recipe

Ingredients
    6 medium sweet potatoes (2 lb.)
    1/2 c. brown sugar, packed
    1/3 c. broken cashews
    1/4 tsp. ginger
    1 (8 3/4 oz.) can sliced peaches
    3 Tbsp. butter
Preparation
    Prepare and cook whole sweet potatoes in salted water.
    Drain, peel and cut crosswise into thick pieces.
    Combine brown sugar, cashews, ginger and 1/2 teaspoon salt.
    Drain peaches well.
    In a 10 x 6 x 2-inch baking dish, layer half each of sweet potatoes, peach slices and brown sugar mixture.
    Bake uncovered at 350\u00b0 for 30 minutes.
