Pita Pizzas - cooking recipe

Ingredients
    4 (6-inch) round pitas, split in half horizontally
    1/4 c. olive oil
    salt and pepper
    1 small red pepper, sliced
    1/2 lb. small red potatoes, cooked and sliced
    1 tsp. dried rosemary
    1/2 c. Parmesan cheese
Preparation
    Place pita rounds on baking sheet.
    Brush on both sides with 2 tablespoons of oil.
    Sprinkle with salt.
    Bake until golden and crisp (10 minutes).
    Heat remaining oil in frying pan.
    Add peppers and cook until softened.
    Add potatoes and rosemary to peppers.
    Heat through, stirring well.
    Season with salt and pepper.
    Divide the mixture among the pita rounds.
    Sprinkle with Parmesan.
    Broil 3 inches from heat until golden, 3 to 4 minutes.
