*Florida Chicken - cooking recipe

Ingredients
    5 Tbsp. shortening (more or less)
    1/2 c. flour
    2 tsp. grated orange peel
    1 tsp. paprika
    1/4 tsp. pepper
    1 (2 1/2 to 3 lb.) fryer, cut up
    3/4 c. water
    2 c. orange juice
    2 Tbsp. brown sugar
    2 tsp. salt
    1/4 tsp. ground ginger
    1/8 tsp. ground cinnamon
Preparation
    Combine flour, orange peel, paprika and 1 teaspoon of the salt and pepper.
    Coat chicken.
    Save 3 tablespoons flour mixture. Heat shortening in skillet.
    Brown chicken on both sides.
    Add water.
    Cover and simmer for about 40 minutes; turn occasionally. Add water, if necessary.
    Remove chicken.
    Pour off all but 3 tablespoons drippings.
    Add saved flour and blend well.
    Combine remaining ingredients and add gradually, stirring constantly. Cook, stirring constantly, until mixture boils.
    Pour over the chicken.
    Good served on platter alone or over rice.
    Garnish with orange slices.
