Eggplant With Cheese - cooking recipe

Ingredients
    2 medium eggplants
    1/2 c. butter
    8 oz. thinly sliced Swiss cheese
    freshly ground pepper
Preparation
    Preheat oven to 350\u00b0.
    Peel and slice eggplants about 1/4-inch thick rounds.
    Soak in salted water 20 minutes and drain.
    Cover with boiling water and drain immediately.
    Pat eggplants dry. Melt butter in a frying pan and saute eggplants 2 minutes on each side.
    Place one layer in a buttered baking dish; top with half of the cheese and sprinkle with pepper.
    Repeat the layers once more. Bake 30 minutes.
    Serves 4.
