Magic Eye Of Round - cooking recipe

Ingredients
    4 1/2 lb. beef eye of the round roast
    8 oz. jar brown mustard
    3 to 4 c. coarse kosher salt
Preparation
    Cover all sides and ends of the roast with brown mustard (use entire jar). Roll roast in salt, covering meat completely (there should be no mustard visible). Place roast on a rack in roasting pan. Bake at 475\u00b0 to 500\u00b0 10 to 12 minutes/pound for rare, 12 to 15 minutes/pound for medium and 15 to 20 minutes/pound for well done.
