Seafood Casserole - cooking recipe
Ingredients

1/3 c. chopped onion
1/4 c. melted margarine
1/4 c. all-purpose flour
1 tsp. salt
1/2 tsp. white pepper
1 c. half and half cream
1 c. milk
1 c. shredded Cheddar cheese
2 c. cooked, regular rice
2 Tbsp. lemon juice
1 (6 oz.) pkg. frozen crab meat, thawed and flaked
1 c. cooked, peeled and deveined shrimp
1 (5 oz.) can water chestnuts, drained and sliced
2 Tbsp. chopped pimiento
Preparation

Saute onion in margarine until tender.
Add flour, salt and pepper.
Cook until bubbly.
Gradually add half and half and milk, stirring constantly; cook over low heat until smooth and thickened.
Remove from
heat.
Add remaining ingredients except 1/2 cup of cheese.
Stir to blend.
Spoon mixture into a lightly greased 2-quart casserole dish.
Sprinkle with reserved cheese. Bake at 325\u00b0 for 30 minutes.
Serves 6 to 8.
