Zucchini-Vegetable Soup - cooking recipe
Ingredients

2 to 3 medium zucchini, thinly sliced
5 to 6 medium fresh tomatoes, quartered
1 medium onion, coarsely chopped
1/2 c. celery, chopped
2 c. shredded Cheddar cheese
salt and pepper to taste
Preparation

Place all raw vegetables in saucepan with approximately 1 1/2 cups water; add seasonings.
Simmer together until vegetables are done (about 30 minutes).
Add 1 cup cheese and simmer 5 minutes. Serve with extra cheese sprinkled on top.
Makes 6 servings.
