Black-Eyed Pea Salad - cooking recipe

Ingredients
    1/2 lb. black-eyed peas
    3 Tbsp. lemon juice
    3 Tbsp. balsamic vinegar
    1 medium onion, chopped
    1/2 c. red and yellow sweet pepper, chopped
    1/2 c. minced fresh parsley
    1 clove garlic, minced
    1 tsp. basil
    1/2 tsp. oregano
    1/4 tsp. dry mustard
    1/4 tsp. black pepper
    2 to 3 Tbsp. olive oil
Preparation
    Rinse black-eyed peas well.
    Soak overnight.
    Rinse with fresh water again, then cook until tender.
    Drain.
    Pour lemon juice and garlic over warm peas and let cool while marinating.
    Add remaining ingredients to black-eyed peas after they are cool. Toss well. Chill 2 hours.
