Zucchini Cheese Muffins - cooking recipe

Ingredients
    3 slices Swiss cheese, grated
    2 c. grated zucchini
    3 Tbsp. finely chopped onion
    1/2 c. seasoned bread crumbs
    1/2 tsp. salt
    2 eggs
    vegetable oil
Preparation
    Combine all ingredients except vegetable oil.
    Stir until well blended.
    Heat 1 teaspoon vegetable oil in each muffin cup.
    Spoon batter into each cup.
    Bake at 375\u00b0 for 20 minutes or until golden brown and puffed.
    Makes 12.
