Ingredients

3/4 c. apricot preserves
2 tsp. grated orange rind
2 Tbsp. orange juice
4 cornish hens
1/4 tsp. paprika
1/2 c. cashews
2 Tbsp. margarine, melted
1 (6 oz.) pkg. long grain wild rice
2 1/2 c. chicken broth
1 bunch green onions
Preparation

Combine preserves, orange rind and orange juice.
Set aside. Remove giblets from hens, rinse with cold water and pat dry. Sprinkle with paprika.
Place hens breast side up in lightly greased roasting pan.
Bake at 350\u00b0 for 1 1/4 to 1 1/2 hours. During last 30 minutes baste frequently with 1/2 cup of apricot glaze.
Saute cashews in butter until golden.
Drain and set aside, reserving butter.
Saute green onions in same skillet until tender. Add rice and prepare according to package directions substituting chicken broth for water.
Serve with cornish hens.
