Peanut Butter Fudge - cooking recipe

Ingredients
    1/4 c. roasted unsalted peanuts, coarsely chopped
    1 c. milk
    2 1/2 c. sugar
    3 Tbsp. unsalted butter
    6 oz. creamy peanut butter
    1 tsp. vanilla
Preparation
    Line 8 x 8 pan with foil; lightly grease with vegetable spray. Sprinkle peanuts over bottom of pan.
    Put milk and sugar in a medium heavy-bottomed saucepan fitted with a candy thermometer. Boil over medium heat, stirring to keep from sticking. Cook until the mixture reaches 240\u00b0 (soft-boil stage).
    Remove from heat. Gently place butter, peanut butter and vanilla in pan. Do not stir. Let mixture cool down 5 minutes, then beat vigorously with a spoon or the flat beater of a stationary mixer until dense and smooth. Turn fudge out into prepared pan. Spread evenly. Let set 45 minutes. Will last up to 3 weeks in refrigerator.
