Jalapeno Cornbread - cooking recipe

vegetable cooking spray
1 1/2 c. self-rising cornmeal
1/4 c. self-rising flour
1 c. buttermilk
2 eggs, beaten
1/2 c. vegetable oil
1 (8.5 oz.) can cream-style corn
2 or 3 chopped jalapeno peppers
1 medium onion, chopped
1 1/2 c. Cheddar cheese, shredded
Preparation

Preheat oven to 375\u00b0.
Spray 9 x 13-inch baking pan with vegetable cooking spray.
Place pan in oven to warm.
Mix all ingredients except cheese in a large bowl.
Pour half of batter into warm, prepared pan.
Sprinkle half of the cheese over batter. Spread remaining batter over mixture and top with rest of cheese. Bake for 35 minutes.
Yields 16 servings.
