Low-Fat Pineapple Upside Down Cake - cooking recipe

2 Tbsp. butter
1/2 c. packed brown sugar
1 can unsweetened pineapple rings, drained
3 egg yolks
1/2 c. sugar
1 1/2 c. flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. salt
Preparation

Melt butter or margarine in 10-inch cast iron skillet. Sprinkle brown sugar over butter while still on heat.
Remove from heat and cover with pineapple rings.
Separate egg whites; set aside.
Beat yolks well and add 1/2 cup sugar; beat well again. In separate bowl, mix flour, sugar, baking powder and salt.
In saucepan, boil 1/2 cup water; alternate mixing of egg mixture and water into dry ingredients.
Beat whites until stiff and fold into batter gently.
Spoon batter over pineapple and bake at 350\u00b0 for 45 minutes.
