Broiled Salmon Steaks - cooking recipe

Ingredients
    1/3 c. salad oil
    1 1/2 tsp. grated lemon rind
    1/3 c. lemon juice
    1 small clove garlic, crushed
    1 tsp. sugar
    1/4 tsp. pepper
    1 tsp. salt
    1/2 tsp. dried leaf oregano
    4 (1-inch) salmon steaks
    1/3 c. sliced stuffed olives (optional)
Preparation
    Combine oil, lemon rind, lemon juice, garlic, sugar, pepper, salt and oregano.
    Grease rack of broiler pan very well.
    Lay steaks on it and brush well with oil mixture.
    Put 4 inches from heat and broil 5 minutes.
    Turn steaks carefully, brush with oil mixture again and continue broiling 2 to 3 minutes or until salmon flakes easily with fork.
    Add sliced olives to remaining oil mixture if desired and heat just to boiling point.
    Serve over salmon.
