Hoecakes - cooking recipe

Ingredients
    2 c. white or yellow corn meal
    1/2 tsp. salt
    1 c. hot water
    2 Tbsp. melted shortening or bacon drippings
    1 to 1 1/2 c. cold water
Preparation
    In a bowl, combine the corn meal, salt, hot water and shortening.
    Add enough cold water to make the batter pour easily. Grease a griddle or heavy skillet and set it over moderate heat. Pour about 2 teaspoons of batter on griddle or in skillet for each hoecake.
    After 3 to 5 minutes, or when the top begins to bubble, flip the hoecake with a spatula.
    Cook until the bottom turns a light brown.
    Eat immediately.
