Filled Cookies - cooking recipe

Ingredients
    1 c. margarine
    2 c. sugar
    2 eggs
    5 c. flour
    1 tsp. soda
    2 tsp. baking powder
    1 tsp. salt
    1/3 c. buttermilk or 1/3 c. milk and 1 tsp. vinegar
    1 tsp. lemon extract
    1 tsp. vanilla
Preparation
    Cream the margarine and sugar together. Continue creaming while adding eggs. Sift flour, soda, salt and baking powder.
    Mix by hand (not mixer).
    Alternate with milk to creamy mixture. Add vanilla and lemon extract.
    Refrigerate overnight.
    Roll on floured surface (small amount of dough at a time).
    Cut in a circle.
    Put 1/2 teaspoon of filling and top with another circle. Crimp with fork. Bake at 350\u00b0 for 12 to 15 minutes.
