Tomato Soup - cooking recipe

Ingredients
    1 large onion, thinly sliced
    1 Tbsp. olive oil
    2 c. chicken broth
    6 medium tomatoes, peeled and quartered
    1 (6 oz.) can tomato paste
    1 tsp. sugar
    1/2 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. snipped fresh basil or 2 tsp. dried crushed basil
Preparation
    Cook onion in oil until tender, but not browned.
    Stir in chicken broth, tomatoes, tomato paste, sugar, salt and pepper. Heat to boil; cover, reduce heat and simmer for 20 minutes.
    Add basil and simmer for 5 minutes longer.
    Cool slightly.
    Put small amounts of tomato soup in a blender or food processor.
    Cover; blend until smooth.
    Serve warm.
    Makes 4 servings.
