Crabmeat-Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplant
    1 onion, minced
    1/2 bell pepper, minced
    1 1/2 c. seasoned bread crumbs
    2 c. grated cheese
    2 Tbsp. butter
    2 (7 oz.) cans crabmeat
    2 eggs, beaten
    salt and pepper to taste
Preparation
    Boil eggplant about 25 minutes.
    Drain and mash.
    Combine eggplant, onion, bell pepper, 1 cup bread crumbs, 1 1/2 cups cheese, salt and pepper and melted butter.
    Mix until combined. Add crabmeat and beaten eggs.
    Mix and pour into a buttered 2-quart casserole dish.
    Spread remaining cheese and bread crumbs on top.
    Bake at 400\u00b0 for 20 to 30 minutes.
